The SAP people provide a lot of information and guidance on how to take advantage of Virtualizing SAP on Windows with Hyper-V.

Excellent technical information can be found in the Virtualizing SAP Applications on Windows paper. The SAP Global Alliance Team has an earlier blog post from August 2008 outlining the joint SAP/Microsoft efforts to optimize the solution at RTM of Hyper-V.
