Softpedia released a story yesterday giving more detail about the screenshots of the leaked Windows 8 server screenshots by the WZOR website.
One screenshot concerning Hyper-V is quite interesting, because it includes the option for Dynamic memory. Dynamic memory would allow you to specify the amount of RAM a VM will start, and a maximum amount of memory the VM could use.
Keep in mind though that there is no guarantee that this feature will make it into the final version of Windows 8 Server.

Perilli from Virtualization.info mentions that the screenshots could also mean that this functionality will be released with the next Service Pack and not with Windows Server 8. (read more here)
